Mini Meat Loaf Sheet-Pan Meal

Ingredients
2 large eggs, lightly beaten
1 cup tomato juice
¾ cup quick-cooking oats
¼ cup finely chopped onion
½ tsp. salt
1½ lbs. 90% lean ground beef
¼ cup ketchup
3 Tbsp. prepared mustard
3 Tbsp. brown sugar
¼ tsp. nutmeg
4 large potatoes peeled and cut into ½” pieces
1 lb. carrots peeled and cut into 1” chunks
3 Tbsp. olive oil
1 tsp. garlic salt
½ tsp. pepper
Instructions
Preheat oven to 425. In a large bowl, combine eggs, tomato juice, oats, onion, and salt. Add beef and mix lightly but thoroughly. Shape into 6 4 X 2½” loaves. Place on sheet pan or large shallow roasting pan.
Combine ketchup, mustard, brown sugar, and nutmeg; brush over loaves.
Combine potatoes and carrots with the olive oil, garlic salt, and pepper. Toss to coat and add to pan. Bake until a thermometer inserted in meat loaves reads 160 and vegetables are tender, about 45 minutes. Let stand 5-10 minutes before serving.
