Mexican Beef & Rice Casserole

Ingredients
1 pound extra lean ground beef
1½ cups Mexican Style shredded 4 cheese
1 pkg. taco seasoning mix
1 cup long grain white rice, uncooked
1 cup frozen mixed vegetables (carrots, corn, peas)
1 can diced tomatoes, undrained
1 cup thick and chunky salsa
1 cup chicken broth
Instructions
Heat oven to 375. Brown meat in large non-stick skillet. Drain and return to skillet. Reserve one cup of the cheese and add the rest of the cheese and all remaining ingredients to meat. Mix well and spoon into a 9 x 13 baking dish sprayed with cooking spray. Cover and bake 40 to 50 minutes. Top with remaining cheese. Bake uncovered 5 more minutes.
