Blue Potatoes

Ingredients
½ cup minced onion
½ cup melted butter
1 32 oz. pkg. frozen hash browns, defrosted
1 16 oz. carton sour cream
1 8 oz. pkg. shredded sharp cheddar cheese
2 (4 oz.) pkgs. crumbled blue cheese
1 (10 ¾ oz.) can cream of chicken soup
1 clove garlic, minced (optional)
Salt & pepper to taste
Topping:
½ cup melted butter
2 cups corn flake crumbs or Ritz cracker crumbs
Instructions
Heat oven to 350. Lightly grease a 9 x 13 inch baking dish. Sauté onion in butter until onions are clear. Combine with remaining ingredients except topping. Spread in baking dish. Mix together melted butter and crumbs for topping. Sprinkle evenly over top. Bake for 45-60 minutes or until brown and bubbly.
