Chicken Pasta Parmesan

Ingredients
4 Tbsp. vegetable oil
2 lbs. boneless chicken, cut in strips
2 cup sliced mushrooms
½ cup onions, chopped
4 Tbsp. dry sherry (white wine or chicken broth)
2 cans Cream of Chicken soup
1 cup sliced peppers
1 cup grated Parmesan cheese
Instructions
In skillet, in hot oil, cook chicken until browned. Remove and set aside.
In hot drippings, cook mushrooms and onion until tender. Add sherry and soup. Heat through, stirring often. Add chicken and peppers. Cover and simmer 10 minutes, stirring occasionally. If it begins to get too thick, add a little chicken broth. Stir in cheese until melted. Serve over hot cooked pasta.
(This recipe is doubled. When it is halved, it serves 3-4)
