Fresh Carrot Puff

Ingredients
2 lbs. carrots, peeled, cooked, pureed
2 tsp. lemon juice
2 Tbsp. minced green onions
¼ lb. butter, softened
¼ cup sugar
1½ Tbsp. flour
½ tsp. salt
¼ tsp. cinnamon
1 cup milk
3 eggs
1 egg white, stiffly beaten
Instructions
Combine all ingredients except egg white. Mix well. Fold in egg white. Pour into well-greased, 2-qt soufflé dish. Bake in preheated 350 oven 50 to 60 minutes or until center is firm to touch. Serve immediately.
