Chicken with Apple Cream Sauce

Ingredients
4 boneless skinless chicken breast halves
1 Tbsp. vegetable oil
1 cup apple juice
1 tsp. lemon juice
¼ – ½ tsp. dried rosemary crushed
½ tsp. salt
1/8 tsp. pepper
1 Tbsp. cornstarch
½ cup whipping cream
1 Tbsp. minced parsley or 1 tsp dried
Instructions
In a skillet over medium heat, cook the chicken in oil for 4 minutes on each side or until browned. Combine the apple juice, lemon juice, rosemary, salt and pepper; pour over chicken. Reduce heat; cover and simmer for 10 minutes or until juices run clear. Remove chicken and keep warm.
Combine cornstarch and cream until smooth; stir into cooking liquid in skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Return chicken to skillet and heat through. Garnish with parsley.
