Quick Yeast Muffins

Ingredients
1 package dry yeast
2 cups warm water
¾ cup butter, melted
¼ cup granulated sugar
1 egg
4 cups self-rising flour
Instructions
Preheat oven to 350. Grease muffin pan or pans. Dissolve yeast in warm water and set aside.
Combine butter, sugar, and egg. Beat well. Stir in yeast mixture. Gradually add flour, mixing well after each addition. (Mixture may be used immediately or stored in the refrigerator for up to 2 days in an airtight container.) Fill muffin cups 2/3 full. Bake at 350 for 30 minutes. Makes approx.. 2 dozen.
